Making Ice Wine

is a type of dessert wine that is produced of grapes that have been frozen while still on the vine.The wine made of these frozen grapes becomes very sweet.The water in the grapes freeze, but not the sugars.This results in a smaller amount of highly concentrated wine.The freezing of the grapes happens before fermentation and only healthy grapes (not affected by noble rot) are used for this purpose.

Ice wines are often more expensive than regular wines because of the small amounts produced and the risky production process and hard work involved.

Inniskillin Icewine is made from grapes that have been left to hang on the vine until late December or January when they are then harvested and pressed in the extreme cold. The resulting wine is pure heaven. This video shows how it is made.
